Taco Stuffed Shells

I like this a lot because you can pre-prep a lot of it and then just throw it in the oven.
The first thing you will need to do is set out 4 ounces of cream cheese to get to room temperature or mixing is going to be an issue. Then brown 1 lb ground beef and season with a packet of taco seasoning according to the package, I dont use as much water as they suggest bc you dont want the meat part to be watery it wont mix right later.  Next boil some water to cook your jumbo shells, it usually takes me about half a box. Once the meat is cooked put it in a mixing bowl add one cup shredded cheddar and one cup shredded jack cheese as well as the cream cheese you set out (make sure to cube it first)- you want this to be mixed together pretty well. When the shells are done pour a little olive oil over them while they cool in the strainer so they dont stick together. While you wait for the shells to cool get a 9x12 baking pan and cover the bottom in a layer of salsa of your choosing. Once the shells are cool enough take a spoon and fill each one, place them on the salsa. At this point you can either cover and chill until you are ready to cook, or cover and throw it in the oven! When you are ready to cook, preheat oven to 350 and cook covered for 30 minutes, uncover and top the shells with a little extra cheese and stick it back in the oven for 5-10 minutes to melt the cheese, take out and serve with jalapenos and sour cream!
